Chef Edward Lee is renowned for his soulful global style, rooted in traditional Asian influences. His signature knife perfectly reflects his own cultural crossroads, blending charred handles reclaimed from Kentucky Bourbon barrels with 53-layered Black Damascus steel, into a clean Asian Bunka design. The LIMITED EDITION knife design can be defined as spiced up simplicity, built to perform in the kitchen with the gritty beauty of a well-loved tool.

CheF EDWARD LEE

Chef Edward Lee is a Brooklyn-born and Louisville-based chef, James Beard Award-winning culinary author who frequently appears on TV in shows such as “Top Chef” “Iron Chef” and “MasterChef.” His restaurants in Louisville and Washington DC tell the narrative of his Korean identity and Southern culinary roots. 


He is passionate about telling a unique story through his knife design, and giving back to his nonprofit, The LEE Initiative which strives to bring equality and diversity to the restaurant industry, for which he was awarded a Muhammad Ali Humanitarian Award. 


“Knives are so personal,” says Lee. “A good knife is both practical and functional, not just beautiful. But the best knives also tell a story. I am excited to be working with Messermeister to do just that, while at the same time giving back to a cause that’s essential to me.”

LIMITED SPECIAL EDITION BLADE


Due to the nature and limited quantities on the Edward Lee Chef's Knife, once sold out the blade will no longer be available and we will not produce another run. This blade is meant to be special and one of a kind.

Some care is needed for the knife to ensure it lasts.

RULE 1

Hand wash and thoroughly dry. 
Avoid using dishwashers.

RULE 2

Clean immediately, especially after cutting salty or acidic foods like tomatoes and citrus.

RULE 3

Regularly apply a light coat of mineral oil using a paper towel to the blade and handle.

Chef Edward Lee’s non-profit The LEE Initiative will benefit from Messermeister’s Forge Initative.The LEE Initiative is an acronym for Let’s Empower Employment. “When we see a need for more diversity, equity, sustainability and compassion in the restaurant industry, we find innovative and impactful solutions. We create programs that make a real difference in the lives of the next generation of restaurant industry professionals. We help our community and inspire others to get involved.”

OUR MISSION 
To shape the world for the better. 

The Forge Initiative is a collaboration between Messermeister and chefs to create innovative products. A portion of the proceeds goes to non-profit organizations chosen by the chefs.

Messermeister believes in giving back beyond the kitchen. Supporting non-profits has always been a core part of our identity. Over the years, we have partnered with various non-profit organizations. However, we wanted to establish partnerships that allow us to craft truly unique knives with our favorite chefs while making an even bigger impact.
