At first I was disappointed by the knife, it was sharp, but didn't seem as sharp as my other Olivia Elite Messermeister chef knife. So I ran it through my whetstone and afterwards, the knife came out incredibly sharp, cutting with ease especially with thicker meats or vegetables. Great knife though for some reason mine mine didn't come sharpened right out of the box.

MM has had this vegetable knife in production for many years; I've had mine for nearly 20 years. Mine has seen many miles in commercial kitchens and is currently my go-to knife for at home use. I can't tell you how many of my cooks have used my knife over the years and then gone out and got one for themselves. I barely pick up my 8" chef knife anymore, unless I'm fabricating meats. Experimented with numerous Nakiri options, but I prefer the slight angle and slightly taller blade of the MM. Ridiculously good value at $100.

SHARP! It is larger than I imagined. I would categorize this knife as a hybrid between European and Japanese style and could describe it as a very large Santoku knife. It is not a true vegetable cleaver in that it has a slightly curved blade which gives some rocking capability. The slight curve vs the straight edge of a Nakiri vegetable cleaver are a choice and the knives are wielded differently. I chose this. An absolute gem and worth every penny. I will sharpen using a 15 degree angle - Japanese - instead of 20 - European, which means the edge will be sharper but more delicate. This would be the 6th knife in your ideal collection, after the 8" chef's, paring, serrated bread, slicing, and boning knives have been bought. Or you could just start with it, you won't regret buying this knife.

This knife looks and performs better than my expectations. It's beautiful and very well crafted. Has good weight and is well balanced. I purchased this knife to prep-cut large, hard vegetables, such as acorn and winter squashes. The width of the blade facilitates a straight cut with no skewing. A task that my regular chef's knife couldn't handle as efficiently. Very sharp edge right out the box. I'm glad I found this gem.

It is difficult to understand why no one has reviewed this knife. It's got kullens, a broad blade, feels hefty, and looks indistructible. I also thought the price was right (U$100) for a forged, quality, high tech metal alloy knife. I don't have particularly large hands, but I'm sure this knife would be a favorite for larger handed people. It is unquestionably the sharpest, out-of-the-box knife I have ever encountered.The full tang, POM handle is smooth and ample. I will reserve judgement for this choice of handle material, which is probably a trade-off for longevity and durability. Never the less, this handle is sculpted well (Is ergonomic the word?) and the bolster area allows for the thumb and index finger grasp, which is a credit considering it's smoothness. Don't let this smooth handle thing scare you. There are plenty of POM handled knives out there, but I would be amiss if I did not mention it. This knife will generously accommodate the serious cook as well as the not-so-serious.I have not seen the "stamped" version, but I am sure it is a very nice knife as well, especially for those who would want something a little lighter.
