I added this carving knife to my 10+ yrs old 10 piece set and knew that I would love it's performance but I was more amazed that other than printing on the blade, it looks like it came with the set! Truly a time tested design that looks, performs and feels great in the hand. I've long recommended these knives to anyone looking for the last set that they will ever need and will continue to do so. Very thin, sharp blade for making delicate, controlled, thin slices through the most tender, juicy brisket or any other meat that might be easily torn apart by a coarse blade.

Pros: The length and weight of the knife allow for even cuts of brisket, pork belly, tri tip, etc. (with some effort to cut through the bark).Cons: As others have noted, the knife is heavy so fatigue can set it if cutting multiple meats. Surprisingly, the knife was not very sharp out of the package. This contradicted other reviews that spoke about how supremely sharp this knife was. Also, the blade does not bend (which does not make it good for cutting thin slices of salmon - however this may be a plus if you're looking for a firm blade).

An excellent knife, razor sharp and slices through cuts of meat like a dream. It's easy to get equally spaced slices along the entire piece of meat.

Had a chance to hold one and here's my 2 cents.Most importantly the balance of the knife is not entirely neutral. Slightly handle heavy, maybe a few grams or so. I think it helps the blade feel lighter in hand.I do not like scalloped blades. Just my preference and opinion.The metal is a good alloy at the sale price of $90. This type of knife (slicers, carvers, sujihikis, etc.) seem to be a higher priced category and $90 seemed reasonable.This knife is an alloy so the metal is softer than strictly high-carbon or VG10 steel blades. The blade is flexible, not whimpy, just soft. At least it won't chip.The fit and finish is acceptable, not $150 though.It came fairly sharp out the box, but an ultra fine stone would take it to the next level. Did not explore durability/edge longevity.I do like the profile. Spot on. Also the heel of the blade could be more exposed for easeir sharpening.Good knife if this is your price cap. Better than most at $120It met some of my criteria for a slicer. 3 stars.
