Terrific small boning knife. Very sharp out of the box and holds sharp edge well. Usedit this morning to bone out 16 chicken thighs. Knife made short work out of this task.Great addition to my collection of other Messermeister knifes. I highly recommend this knife.

I bought a few Messermeister Meridian Elite knifes, they are so sharp and great to handle. It feels wonderful to hold in my hand and the weight of it makes it easy to use. I haven't used this knife yet as I've bought a starter knife set and they are gorgeous. I would buy more but if you have one of the Messermeiser knifes, you have a knife for life. I've already cut myself a couple of times. Be very careful, they are extremely sharp.

I've wanted this knife for several years and finally bought it. I can't tell you how glad I am that I did. It's razor sharp out of the box, sharpens quite easily and keeps it's edge much longer than any boning knife I've previously owned. I use to sharpen my boning knife daily and now I can go nearly a full work week between sharpening. I'm using this to do butchery of whole hogs, rabbits, and guinea fowl in a buys Manhattan restaurant. The handle shape is great, fits well in the hand and doesn't fatigue like blockier style handles do. I own several Messermeister knives, they're the only ones that come out of my knife bag regularly and probably the only brand I'll ever buy again. Aside from the great quality of the knives is the price. Not cheap but I don't worry about using my best knives in the kitchen because I could afford to replace them if something happened to them. If you're looking for a great boning knife that'll make your work easier, buy this.

I use this knife professionally in a very busy NYC kitchen doing butchery of small and medium animals. The handle size is easy to grip, making for much less hand fatigue when you hold the thing for hours a day. The blade flex is perfect for skinning pork bellies, hams and shoulders. It takes a razor edge and holds it well. My last boning knife (a Henckels) wore out very fast, wouldn't hold an edge and had rather a blocky handle. No more of that! I own several Messermeister knives and they're probably the only brand I'll buy. If you're a professional I highly recommend this knife, especially for the Amazon price!

I have a collection of these marvelous knives but did not have the firm boning knife. I usually use the flexible boning knife but this firm one really has a lot of uses.The entire line of Messermeister Meridian Elite knives is, to me, the best value out there (and I've been cutting meat for fifty years). The Meridian series is the next to the top -- both use the best steels and have a slightly different edge than the lower two series (very nice and less expensive). The top series is prettier but I buy knives for the steel.I refuse to buy any of the "popular" knives designed for the rich folks and sold by the department stores -- their steel is nowhere as good as their prices are high.My "fancy knives", always gifts from well meaning friends, lose their edge and require sharpening instead of just honing. After five years of hard use, honed only by a diamond steel, the Messermeister edges are wonderful.These are lifetime investments -- I wonder to whom I will leave them?
