Have used a Meridian Japanese style knife for years and loved it. Tried an inexpensive chef's knife and though it did the job well, the lack of balance made it tiring to use. It felt like an axe, with all the weight far from the hand. The Meridian chef's knife is perfectly balanced like the older one, holds the edge well and is a delight to work with.

Really great knife! Edge retention is pretty good and hones really well. I haven't needed to use a whetstone yet as a result. Very well balanced, comfortable handle, and handles all of my chopping needs very well. Rounded heel makes it very easy to hone and will likely make sharpening very easy as well. I specifically wanted to get a German knife without a heel bolster. Zwilling/Wusthof, who? Messermeister is where it's at!

I own an 8" Wustohf Classic Ikon Chef's knife. I am very happy with it.I wanted to add a 10" Chef's knife to my collection and had planned on buying another Wustohf Classic Ikon. However, numerous on-line reviews of the Messermeister Meridian Elite knife were very positive, and several specifically concluded that it is comparable to the Wustohf Classic Ikon, and a better bargain.I agree. The both the Messermeister and Wustohf knives are full tang knives with partial bolsters, which is what I prefer. Both are ground to about 15 degrees on either side, and both are shipped sharp and ready to use. The handles are very similar and they feel pretty much the same in use. The quality of the steel seems comparable. I am very pleased with this knife.

This is great knife, and the one I probably use most often now. The 7" size is pretty nimble but big enough for most things. Given it's smaller size, it's a tad handle heavy but that can sometimes be an advantage. Their "Stealth" line has a thinner spine than the traditional Meridians, but it's still very solid. I use a traditional 9" Meridian (not Stealth) for bigger things like melons. It's great, but I think the Stealth versions would be plenty hefty in bigger knives while being lighter. The quality and "fit and finish" are top notch. It seems like the 7" version is disappearing (no longer mentioned on the Messermeister site, where I bought mine), so pick one up very soon if you are on the fence.

I had this knife since culinary school. It kept its edge extremely well when maintained with a honing steel. I only replaced it after my knife roll was lost, possibly stolen. It is a great high quality knife.

Wish I had purchased this knife years ago. Arrived razor sharp, it has a 15 degree edge and is a 58-59 on the Rockwell hardness scale. It has a nice broad blade and curved belly for chopping. I chose this over Wusthof, Henckels or Shun and would do it again.

I bought this knife partially because it's what Sara Moulton used on her old PBS cooking show, but also because I heard about the Messermeister affiliation with cooking schools in the US. Simply put, the knife lives up to the hype. I purchased the 10" Meridian Elite Stealth model, and can attest that it was beautifully sharp out of the box. With regular steeling, this baby maintains an edge well. Despite the relative thickness of the spine, the 15-degree bevel slips smoothly through even the toughest chopping jobs, like the 4 lbs. of sweet potatoes that go into my kimche poutine, then gracefully transitions to slicing paper-thin onion for side-salads. The knife is big enough for the gnarliest tasks, but performs beautifully at detail work as well, like julienne, mincing garlic, or brunoise. Incidentally, since you're essentially wielding a short-sword, the top third of the knife is ACTUALLY LARGE ENOUGH to tackle any and all fine work. So, no need to be lazy with my tiny santoku anymore.I know I'm gushing already, but my favorite thing by far about this blade is the handle. I have huge hands, and my previous kitchen favorite, an old Wusthof Le Cordon Bleu 9" cook's knife, has an annoyingly small handle for its' size, as well as an awkwardly short bolster. My grip has always been choked on the knife, and despite loving its' other handling characteristics, it always bothers me when I'm using it for bigger jobs. This is not a problem for the Meridian Elite line. The handles are longer than the equivalent grips offered by Wusthof (even the Classics, which have different handles than the Le Cordon Bleu line), and this works extremely well for me. Furthermore, the balance is better than any other knife I've ever handled. It's located perfectly at the pinch point on the bolster. All this adds up to a knife with exceptionally forgiving handling, especially considering its' great size.In all, I cannot say enough good about my Messermeister. It has easily supplanted my old favorite in the kitchen, and is so big that when I have guests in the kitchen, they rarely want to use it (all the better... I don't know if I'd share well with this one).

My wife and I each have one, and they are both 7 or 8 years old. They still cut amazingly well! We got them factory sharpened once about 4 years ago, and I'll clean them up on the steel once a month or so. They are just great for meats, fish, and veggies galore. Goodbye carrots flying across the room when you cut. I use them for avocados, watermelon, carne asada, lettuce, and pretty much everything else (mind you, we cook ~15 meals a week at home). The other messermeister must-haves are a tomato and bread knife. Maybe a carver if you do a big roast or turkey but honestly this does the rest.The only drawback is you cannot go to a friends house to cook (or stay in an airBNB) without bringing one along with you. Excellent value!

This has become my every day cooking knife. I own several high end chefs knives but this one is the one I use for most things, Sure I use my shuns for fish and pork but this one is for practically everything else. It is comfortable to use, is nicely durable(my uncle banged the tip when he was cutting a turkey but that was user error and it cleaned up. User tip don't be a dummy and cut turkey inside the roasting tray, metal doesn't get along with metal ya dummies!.) The scales look great and it has a nice weight to it.

My wife and I cook nearly every night and having good tools is really important to us. I have several high end and hand made kitchen knives and this is always the one I reach for first. It isn’t the absolute sharpest but it’s far more durable than my Japanese stuff. And though it’s not the most beautiful it’s the most forgiving. It’s a wonderfully balanced knife and the shape and weight means that its up to every task I’ve put against it. While there may be more specialized options if you are only going to have one good knife in your kitchen this would be my vote.

I just received the 10” Meridian Elite last week as an early Christmas Gift. My current line-up is all Wusthof; Classic Ikon, Epicure, Classic. I opted for this knife for a heavy/wide 10”. So glad I went for it! This knife has superb balance and a favorable weight. There is a clear difference on how Messermeister finishes there blade edge vs wusthof. The smooth, even camber into the 15 degree edge allows the Messermeister to glide effortlessly, virtually through any food item. I’m keeping this brand as part of my line-up, excellent quality to complement my Wusthof collection. I have a meridian elite boning knife already on the way.My only negative review would be the condition upon arrival. The blade tip was slightly folded, with some minor chinks within the first 1/2inch of the tip. I considered returning the knife, but decided to fix it myself. I just smoothed out the chinks and reshaped the tip on my fine grit stone.The current price is amazing! $114 for this knife is a steal!(even though it was a gift) Part of the reason I didn’t return it for the minor defect, and I was too excited to use it.

I sharped it once with whetstones and man it holds up the edge for a loooong time. It's also light, as the 'stealth' means it's a thinner blade. It's pretty much the only knife I grab from the knife block, together with my two other new Messermeisters. I really recommend the Stealth blade as I have a 'regular' one and it's a little too thick and heavy as compared to this one.

The is the first real chef's knife I have owned and I wish I would have purchased this years ago.I love the solid and heavy feel of this knife and I now find cutting jobs some much easier. The ultimate test was slicing very ripe tomatoes. In the past I would end up with a mushy pile of tomato but with this knife I was able to cleanly slice the tomato into nice thin slices.

Really nice knife. The 10” is super well balanced and well weighted. I work in a kitchen and this knife is a good workhorse with both prep and line work. Takes an edge well. Keeps an edge well. I find myself doing a maintenance sharpening every week and a half or so with frequent honing. At a week and a half it’s still cutting a tomato with no problems though. I might just be a bit OCD about my edges.I wish the knife had a bit more belly to it but that’s something I’ll get used to. I also rounded off the spine a bit near the handle as I found the sharp angle would hurt my claw hand about 30# into chopping onions.

This was my first messermeister knife and after getting it after being in my cart for over a year u should have bought it sooner. The fit and finish straight from the box is incredible and for $85 it easily compared to my henckels pro and wusthof ikon. Very nice knife I will be exploring more from this company.

I do a lot of prep work in the kitchen and this knife has been a welcome help. It wasn't quite razor sharp ootb, but it was close. Still sharp enough to slice an overripe tomato. After slicing a bushel of bell peppers, I could easily return it to it's initial sharpness with just a few swipes over the honing steel. Very comfortable knife for either pinch grip or racquet grip: no sharp edges except the one that's supposed to be sharp. The partial bolster is great for a pinch grip. It feels very well made, solid. Would recommend to a friend, coworker.

Was looking for a German hollow edged chef's knife at least 9 inches in length and with a bolster that doesn't reach the edge, this was the only option i could find. Fortunately it turned out to be a great option.I'm a professional cook, I have used many knives. This is my favorite German steel knife and would probably be my first recommendation for home cooks as well.The knife does a wonderful job holding a sharp edge. Much better than my Wusthof. It also has a far better handle in my opinion. Probably my favorite western handle i've used. The knife is also easy to sharpen and it takes a lot of abuse. Really great, steel and great handle.The knife does have minor fit and finish issues. The spine and bolster came a little sharp and needed to be rounded. Also the knife that came out of the box was a little dull for me, but probably completely appropriate for a home cook.

This is a fantastic knife. Over the years I've had many top quality knives, the last being a J. A. Henckel. That was a heavy knife and never seemed to stay sharp. I just got this and I am blown away by it. It fits my hand perfectly and is well balanced. It made slicing meat and chopping vegetables a breeze. And it is razor sharp. Totally worth the money.

Just bought this knife for my daughters news knife set I'm going to build for her. Sharp As a Razor out of the box. I like it I've been in the business sense 1983. I bought a Sabatier high-carbon 10 inchknife. Was not out of box Sharp. It is easy to sharpen the high carbon Sabatier knife. As for the messermeister looks like a great knife. And it is razor sharp.

The Messermeister Meridian Elite 8" chef's knife is an excellent knife. The reduced bolster makes the knife lighter and thus more maneuverable. Also allows for longer wear, as the blade can be sharpened down over the decades farther up the rear where the full bolster gets in the way otherwise.But you can get a nearly identical knife for 1/3rd the price (around $40)...including the same high quality German steel (X50 CrMo V15) and same reduced bolster, plus the classic 3 rivet Derlin handle. The Mercer Renaissance comes in 8" or 9" Chef's knife.

This is a workhorse. I already have a complete set of MAC Superiors, and they are excellent, too, but wanted something with some heft to it. This was the answer. 9" is PERFECT, especially if your counter space is at a premium. Much better than the other well know brand German knives.

This is my favorite knife. I use it daily. It's difficult to find a 9 inch Chef's knife; but, for me, it's the perfect length. This one is well balanced and arrives sharp and is easy to keep sharp (I use a couple Japanese waterstones and finish with a leather strop - you could shave with this knife). Unlike most German knives, the fact that the bolster doesn't extend to the cutting edge makes sharpening much easier. It took some research to find Messermeister here in the US, but I'm so glad I did.
