The German 1.4116 stainless carbon alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge.
This knife line is one-piece, hot-drop hammer forged, which produces the strongest blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 57-58.
The three-step, 15° Elite edge is hand stropped on a cloth wheel, creating the sharpest possible cutting surface on an edged tool.
The bolsterless heel simplifies all cutting, sharpening and honing tasks, making use of the entire blade from heel to tip.

Care
Hand-wash with warm water and a mild detergent; rinse and dry immediately.
Do not place in dishwasher.
Avoid cleaners containing bleach or citrus extracts.
Oil the wood handle as needed with food-safe mineral oil.
This 6” Utility knife is my 3rd knife from the Oliva Elite line. I also have the 8” & 6” chefs knives (and a myriad of knives from their Four Seasons Pro line). The attention to detail in this line is impeccable as always. Messermeister is by far my preferred German knife manufacturer! The fact that every knife that comes out of their factory is stropped by hand never ceases to amaze me. You won’t find that level of quality from Wusthof or Zwilling! I am a fan for life!

Messermeister is so much better than Wusthof. I can't figure out why more people don't realize this. This is such a high quality knife - you will look forward to using it. Of course, it's not dishwasher machine safe- who puts their knives in a dishwasher? The wooden handle is unnecessary, but makes it feel much better than cold plastic.

The balance is nice and the wood handle is a thing of beauty; this is easily the most handsome and best-feeling knife I have ever owned.The good news stops there. The big problem is that this knife loses its edge fast. Ours quickly grew noticeably blunter than an old Wusthof we've had for decades. If I was buying again, I would get a cheap, plain and durable 8-inch Victorinox. The consensus everywhere is that those hold an edge and stay together for years.Also, that gorgeous wood handle stops you putting the thing in the dishwasher, which gets annoying after a few months. But not as annoying as its inability to cut a tomato.
